Ever wondered what we did we do before fridges? The process of fermenting foods - to preserve them and make them more digestible and nutritious - is as old as humanity, and gives complex flavours and health benefits. This talk will focus on the basics of fermentation, covering both the why and how, and will explore how to ferment different vegetables and grains. A free online talk, part of Transition Cambridge “Transition to a Better Future” series.
